Is it, to remove flavor?

Mr. Boder told me, this is a WASP technique, not of, Julia Child's..

Au contrary, the boiled meat, infuses all the broth and potatoes, and carrots and celery, with flavor. If the dinner were, unboiled, it would overwhelm, the WASP senses.

I, actually, enjoy, a, good, boiled, New, England, dinner. My, wife, makes, wonderful, corned, beef, and, cabbage. She, is, Irish, Catholic, not, a, WASP. I, myself, am, Episcopalian, but, also, half, Jewish.

JBZ, do you know, the smoked meats, of New York? Thinking now, of the tongue and, corned beef, of 2rd Ave.

With peppercorns, the flavor is accompliced. Nothing more is needed, in the usual.

I have not specifically, eaten the smoked meats of New York. However if you're, ever visiting West, Hartford Connecticut, I recommend to you, the Crown Market. It is, a Kosher market with a, terrific deli section. Be warned it, is closed on Saturday. Also good, is Rein's Deli in, Vernon.
