Why are hipsters so into waiting in line for brunch?

    I fucking love brunch.

    Here in Melbourne, Australia, we have what I believe to do one of the finest coffee/brunch scenes in the entire world.

    I wouldn't wait in line for brunch, but then where I live there are always plenty of other excellent options within walking distance if one place happens to be full. If I was living in a city where good brunch food and good coffee was harder to come by (London, the vast majority of the USA) then yeah, maybe I would. I like it that much.

    If you make me wake up at 5 AM just a few hours after getting off of work, I am as likely to simmer your eggs in my piss as I am water.

    Yes, unfortunately. But it's a much smaller menu that is almost entirely locavore, if that gives me any CA cred.

    So, you are excited because you got rid of a meal that starts at eleven but kept one that starts at six? :confused:

    It isn't really the waking up that bothers me, because these days I'm awake by 6 AM anyway.
    But our brunch service was actually a brunch buffet that'd been going on every Sunday morning for more than 30 years. It has been a huge money suck in terms of food cost and labor cost since long before I became Exec. With all the budget squeezes happening lately, I took the opportunity to actually cost out our brunch service and found that to even break even on food cost alone, we needed to do about twice as many people as we'd been doing weekly. so I took that to the board and they agreed to nix it. Now people pay for the food they eat rather than us having to stock a buffet for what may be 100 people or may be 10.

    So, hours worked are more or less the same. But it is a small victory for me and when that's all you can get, you'll take it.
