Last night I had a local dish, one of the components of which is pure lard laced with rosemary, garlic. It is liberally spread onto the small bread pittas called tigelle. ******* delicious. Screw the food fascist scaremongers in the media.

The symptoms are virtually the same, and Celiac can cause minimal scarring along the same order as a milder case of Crohn's disease. I haven't yet heard of a case of Celiac that necessitated an intestinal or colonic resection though.

Hear, hear. In Poland I had a traditional spread that was nothing more than lard flecked with bacon - I've never regretted that meal.

Awareness of it has grown recently so more people are open to eliminating gluten from their diet to see if it helps them, and that's completely harmless. Going off of gluten for 2-4 weeks to see if your stomach ailments or skin rashes disappear is hardly subscribing to a fad.


I have no intention of trivializing celiac, its real and its serious. Nonetheless, I constantly hear people saying "I'm allergic to eggs, I can only eat organic", or some prattling like that. I think that for many "allergies" have become the new justification for being picky. For full disclosure I am lactose intolerant but love cheese so I just stay close to shore.

Oh, absolutely. I have a very severe case of Crohn's disease (donated 15 inches of intestine to the local hospital dumpster about four months ago) along with diverticulitis, kidney stones, and lactose intolerance. Medically speaking, I shouldn't eat anything at all. But I eat everything. If I can do it, so can anyone else.

I love that spread on polish rye!! I wish they had it here in socal. Only found it in the northeast and obviously poland. And I don't know how to make it =/

I have celiac disease. Apparently roughly one in a hundred have it and technically it's not an allergy, it's an autoimmune disorder.

Oh, to be able to have some decent bread or fresh pasta again.

Correct.

People who are seriously allergic to something make damn sure they don't eat. Peanuts -- if you're allergic to peanuts, you can't even walk past the front door of a Thai place without your tongue starting to thicken.

Versus some asshole who claims to be allergic to anything in the recipe/dish he doesn't much like eating. If you've ever worked as a waiter, you will encounter lots of diners who are deathly allergic to something that's in their appetizer/main course who are suddenly dying to eat it if it's in their desert course. Women on first dates are most likely to have their allergies resolve themselves over the course of a meal.

On the other hand, I've heard of diners who adhere to strict diets, such as vegans, who feel forced to feign allergy to get some restaurants to take their requests seriously.
