I am pretty sure I see some carrots and mushrooms, and 3 peas too. :confused2:

My buddy is a personal chef for a family. I've tried to drag him away to start a restaurant (its a stretch for me but I enjoy a challenge) but he has ZERO desire to leave. Doesn't want to go back to nights and weekends or the stress. I don't blame him.

Chef hours suck. I worked FOH in fine dining one summer and those MFers were crazy. Get off work at 11-midnight, party till the sun came up, show up a few hours later for prep.

I don't know how you can do it if you want to have any semblance of a normal life. I have close married friends who met when he was an exec chef and she was his sous chef. Both worked in high-end fine dining for years, then decided to get out and start a family. He's now the exec chef for a supermarket chain, and she's a culinary instructor at a vo-tech.

I think the dream would be to open a seasonal restaurant in a vacation town. Send the kids to camp, grandma, whatever, and have 3-4 months to scratch the creative itch.

The dogs are super cute, even if they are underfoot.

Last night I also made ravioli, not as pillowesque as mgm's, but it was a saffron infused dough, stuffed with a corn and primo de latte cheese filling (my wife made the cheese -- it is like ricotta but richer since it is not made with whey). Served with basil-parsley pesto and sliced cherry tomatoes from the garden. 2008 Mollydooker 'The Violinist' Verdehlo. It really was the thing I have been wanting to do with corn all season.
