Ha, sorry. The first is a beet salad with a chèvre mousse and caraway tuiles. Second is a langoustine ceviche in a celeriac and apple cream with green apple "snow". Then, the last is beef roasted with red wine braised onions, foie gras, and sauce bordelaise. All from the Eleven Madison Park cookbook.
