    That sounds insane! I would have loved to do something like that, just way too many projects on my hands. The 26 guests I cooked for had probably never had gravy that wasn't made from a packaged mix so it's not like they would have know the difference anyway.

    It's really very simple, more of a classic french sauce than an american gravy, though the thickener gave it a little American thanksgiving twist. The flavor was pure turkey and not chalky, which was nice

    Did foodguy's (Zuni Cafe) dry-brined turkey. Turned out great. Gravy made from the pan drippings was too salty, but only marginally so. On the food it was fine.

    Thanks again for getting me to do that recipe like 2 years ago.

    Roasted a chicken, had that over some salad. Did some roasted Yukon golds w/rosemary and garlic, which were incredible. Simple but tasty.

    Tried a new gastro pub. Braised crispy pork belly, braised short rib pot stickers, some charcuterie, some artisan flatbread with some good stuff (house sausage, caramelized shallots and more)...I ate too much.
