    beer can turkey. It was a 10 pound bird. I've done this with an almost 20 pound bird but needed a tallboy (not the regular 12oz can).

    I've tried the deep fried turkey - but its too dangerous to do in a small back yard (or worse apartment rooftop). the beercan method keeps its very moist and the whole bird turns brown and crisp.

    Or is that what's spread under the turkey skin?

    Anyway, that turkey does look great. Looks really moist.

    we did. I didn't like them that much (at least they weren't expensive). The mushrooms were awesome.

    That's truffle butter on the turkey.

    yup the beer's in me belly. I'm not going to waste a beer just for that. Its a diet coke can filled with turkey stock in a beercan chicken stand.

    whole foods has boneless dryaged ribeyes (28 days) on sale for like 11.50 a pound, on sale from 23$. anyone get these before?

    ^^^ WF beef varies from store to store because it's all sourced locally. But, sure, at that price try one. I prefer bone-in but what the hell.

    Your turkey looks nice, Manton. I did not eat turkey for Thanksgiving this year. I can't say that I missed it.

    Btw, brined a turkey breast based on Ruhlman recipe. Super moist and tasty. One pro-tip: don't make gravy from the pan drippings of a brined bird. Used homemade chicken stock and I was right to do that. The drippings were very salty.

    I was worried about that, but i went ahead and made gravy with the pan drippings from my brined bird and actually had to add salt. I did rinse the bird after I took it out of the brine though.

    I made my "gravy" with a base of brown chicken stock, to which I added turkey necks, aromatics and some herbs. Simmered for hours, reduced, thickened with arrowroot then finally a monte au beurre.
