Made some pasta with salmon-cream-sauce. The sauce was really nice for a sweetish sauce (I only had Lillet blanc and no simple white wine), although I probably didn't have to thicken it.
I sautéed some onions, a little garlic and tomato paste, deglazed it with Lillet blanc and added some thyme and piment d'Espelette. Added the cream and some soy sauce to make it more savory. Strained. (Thickened.)

I had some people over last night. Made some braised oxtail ragu with homemade pappardelle, bruschetta, salad with apples, walnuts and maytag, and panna cotta with blackberry compote for dessert. Drank a lot of good juice too.

I dunno. The tomato flavor was a little overwhelming and the chicken came out with a sort of boiled taste that was gross. I probably did something wrong. May try again with some changes.

L'Atelier de Joel Robuchon last night. Incredible. I think my favorite was the kushi oyster and the onion tart and the orange flavored dessert.

    ^ Looks great.

We had caviar, toast points, creme fraiche, and chilled vodka today.

Sorry, Rambo. That's lobster with chestnuts and chanterelles in a brandy cream sauce. It was very rich, which was what I was in the mood for, but not what I'd want to eat on a regular basis.

That's lobster? Is the poop vein intact?

I remove the digestive tract by pulling on it after steeping the tail in boiling water for 1-1.5 minutes.

Looks like a better overall menu than the one I had this summer. Xericx is a good man to have ordered the foie gras quail over the hanger steak. It was the best thing I had there.
