I'm assuming the title of the grouse refers to the color of the leaves it is wrapped in and not the herbal liqueur?

The turnips looks very nice. How are those prepared and what is the recipe?

Duck confit tacos dressed with shredded cabbage and house made tomatillo salsa for appy and then a NY Strip with caramelized shallot mashers with blue cheese cream sauce and broccolini with house made smokey bacon.

Chartreuse is a way of preparing game. It means layered in cabbage.

I stuffed the other with a mixture of cockles and mussels and roasted it whole. Dorade is a very delicious fish.
