    The one I get is Conservas de Cambados. I'd be happy to pick a few up and send them out to flyover country next time I am in the Berk.

    there are several brands that are good. Matiz is reliable. i also like albo. ortiz is good, too.
    you can find them quite easily online. look at spanish table, or la espanola.

    I'm not going to comment on the secretions but the fish itself looks very nice to me.

    The secretions are a fennel purée and braised baby fennel. The sauce is grapefruit.

    OK, that is a strange plate. It's not really not that great of an idea to two two liquids unless they are direct complements and have a symbiotic reaction, like thick balsamic ringed by basil oil (eg). That doesn't work IMO.

    Wow, nice. Sounds very Barcelona. Or maybe it's just because the better patatas bravas I've had were always in Barca.

    Need to get some of that canned spanish seafood.

    Is there any place in the states that makes a range of Spanish chorizos and delivers? Matt? Foodguy? Man, I'm having a craving right now. Thanks.

    The puree and the fennel oil complimented each other, and the sauce was a different consistency than both. I don't know, I like the flavor combination of grapefruit and fennel. I'm just playing around with different things, though.
