    the gray comes from a couple of factors. it didn't used to be gray, it used to be green. different types of artichokes have different depths of green. yours are large and you pared them down to the point where there was no green left, hence nothing to turn gray. again, gray vegetables don't come from chlorophyll loss. they come from acidity reacting with the chlorophyll to break it down.

    Well, of course they used to be green. What I'm concerned with is why they are now grey. Who wants grey vegetables?

    Before everyone starts in on the MM dogpile, I'd just like to say that I've found this discussion to be rather interesting, as I often do when he posts his rhetoric and discussion results from it.

    Not surprisingly, they also say to cook sous vide at 185. Also, they are not gray.

    lol, that is a motley combo, some is street food, some is restaurant food, some is seasonal, some is not, etc. If anybody visited me in Korea right now I'd take them for Xinjiang style lamb kebabs and hand pulled noodles, probably the best thing going in Seoul right now. I had some last week but I need to hit it up one more time before I leave for Tokyo.
