    Matt, is the lobster sous vide? How is it cooked? Every time lobster gets boiled, I find that that smaller "mitt" piece ends up way overdone.

    Sorry Jamaal, I didn't see your question. I put the lobster(s) in boiling court bouillon, cook four minutes from the time they hit the water and then let them cool in the liquid. My lobster came with claws rather than mitts, but they were both quite good.

    Fiance made a really nice salad last night. Fried green tomatoes over bed of greens w/ basil, goat cheese, and a Dijon vinaigrette. It was phenomenal.

    The squab/ice cream dish is so interesting that I'm actively trying to imagine what it'd be like to eat it. I think I'd like it a lot.
