    As much as I don't find those plates all that attractive nor, other than the beef, tasty looking, I do have to say that you are finally learning how to create things with less with less dour colors.

    beef dish looks tasty. Odd with the "hat of vegetable", but still tasty.




    also, isn't school back in session?

    And I can't tell if you're trying to spell something with the cheese plate or if the letter P made from figs just "came to you" mid cooking. Unless that's supposed to be an R.

    traditionally, a gazpacho was a puree. and i think the best ones still are ... (thickened with a little soaked bread, pureed with garlic and LOTS of good olive oil). in fact, traditionally gazpacho didn't have tomatoes in it at all (it pre-dates the Columbian exchange). it was a puree of bread, garlic and olive oil.

    Finer texture. I passed it through a chinois a few times.


    Sweet potatoes are almost in season.

    And the braised cabbage underneath the skate from this past weekend had potatoes in it, you just couldn't see them.

    Really interesting, thanks. Your explanation in parentheses is how I make it I think. I push a bunch of peeled tomatoes through my sieve, puree with bread, garlic and a ton of olive oil

    in the south of spain, during the summer heat gazpacho is most often drank as a beverage to go alongside the meal. the family i stayed with in sevilla looked at me like i was crazy when i used a spoon to eat my gazpacho. they just sipped it out of coffee cups.

    it's a great dish. couldn't be simpler. i've been thinking about it lately because i'll be demoing it at the hollywood farmers market tomato festival sunday morning, along with local radio goddess evan kleiman. any sfers in the neighborhood, come by.
