    The ceviche looks horribly unappetizing but the cod looks awesome and so does the tomato salad. I like the prawn too.

    I like the dot pattern on the cod but I think you are being a bit stingy there.

    I know what you mean, but in this case, I didn't think it was necessary to add any more sauce to the dish. The cod itself was marinated for 2 days, so it had a lot of flavor already, and the residual marinade acted as a glaze when I put the fish under the broiler.

    And here is what makes black cod so great:

    Where's the salad in the salad dish? Shrimp thing looks awful but the cod looks spectacular.

    tomato dish looks nice. Your plating looks a lot better when you follow somebody else's lead instead of doing whatever "comes to you" in the middle of cooking.

    also, I love ceviche, but agree with Manton regarding that particular dish.

    The skate you posted is much better than today's plating. I'd avoid putting a blob of something on a large shrimp, and the zucchini flowers look overstuffed to me. The quail is gimmicky. Did you like the progression of tastes?

    I admire your persistence.

    The beet soup is cute. It looks like a mimetic take on those little split condiment dishes they give you at shitty chinese restaurants (honey mustard and sweet and sour or something). Also, I've never seen a shrimp look so much like a piece of unpeeled ginger. Does "chilled" mean it was in the fridge or is it somehow tied to the prep?

    yesterday's mgm plating looked much better. And more appetizing. Though I do love stuffed zucchini blossoms and these look nice. I love beets too, so I imagine I'd like the soup.

    I hate the look of that quail dish, the eye of the fig is just staring at me. It does look like a vagina. A toothy vagina stuffed inside of another vagina. The positioning of the quail legs doesn't help the cause.

    i think the zucchini blossom is really lovely. i'm afraid the beet soup is very 1986. and that quail is something you should see a therapist about.
