    you could ask for half portions of both, or you each get one and share half with each other - that is what we usually do. Kinda win-in, I guess. I like foie but sometimes I feel like the michelin bait restaurants give you too much of it. If I ate the whole portion they give me with toast, I'd be full, it's like half the meal on its own.

    The belly I had last night was amazing but it is a bitch to make so I don't really see ever doing it at home.

    I don't share my foie. :)

    Honestly, the only time I thought I might have had a bite or two more foie than I wanted was at Picasso's, and it was probably some of the best seared foie I've ever had in my life.

    I had a place, which sadly went out of business a couple of years ago, and they used to give me double portions of foie. :drool:

    I picked up some live spot prawns at the market this morning - any pointers on how to prepare? I haven't worked with them before. I was thinking I'd saute them with some garlic and cherry tomatoes. Also, best to prepare them head on?

    It's funny, because that piece is maybe 2/3 the size that he used to serve when he was in SF. I don't understand the $50 up charge. A slice of foie gras at high retail is about $12, being that as an upcharge it is always substituted for something else, the cost difference at retail must be about $8, and at wholesale, less. The skill to sear a slice of foie is among the lowest around, and the garnishes aren't more expensive, so the upcharge is basically pure profit. Kind of annoying.

    Interesting. How much is foie a pound? I don't care enough to look at the prices during my cheat days.

    Yeah, that's a crazy supplement charge. I am thinking about getting some to try. I've never had it before. Can it be found at Whole Foods?

    Never seen it there myself. That is, not raw. Mousse, terrines, etc, are all over.
