Yeah, you don't even tell us what's in your pictures. Maybe I'll present my menu as a blank sheet of paper. :)

Now you sound like Daniel Patterson.

And I think you mean pommes de terre fume.

I don't get it. There are no names here, just ingredients.

Also, that should be "pommes de terre fume."

That's me, the adjectivally dishonest chef.

You aren't a chef. You are adjectivally dishonest.

You know, one of the best things I've ever seen in cooking was at a demonstration from Jacques Pepin years ago. Somebody in the audience asked him what it was like being such a great chef, and he said, "I am a cook, not a chef. My wife is the chef."

I love Pepin. He lives right here in CT. Very humble man. I've been reading his book on techniques.

The same could be said for you!

Wasn't meant as a burn. Just real talk.

So, what defines a "chef"? I think the term is used rather loosely, nowadays.

Yeah, it's used loosely and incorrectly. A chef is the person in charge of a professional kitchen. It's not a mindset or a skill level. It's a job title.

OK. Then I am just someone who enjoys cooking. I'm not looking to slap any undeserved titles on myself.
