    You know, one of the best things I've ever seen in cooking was at a demonstration from Jacques Pepin years ago. Somebody in the audience asked him what it was like being such a great chef, and he said, "I am a cook, not a chef. My wife is the chef."

    I love Pepin. He lives right here in CT. Very humble man. I've been reading his book on techniques.

    So, what defines a "chef"? I think the term is used rather loosely, nowadays.

    Yeah, it's used loosely and incorrectly. A chef is the person in charge of a professional kitchen. It's not a mindset or a skill level. It's a job title.
