Interesting choice. Why not fresh? What's the special ingredient? Pio's special sauce?

An easy 8.5 out of 10. Smoke = next to perfect. Doneness = next to perfect. Rub = a little tweaking left.

Last night: Heirloom tomato salad and housemade falafel at Healdsburg Bar & Grill
Tonight: Dinner in the hotel room with my parents. Cyrus Baguette and Walnut/Raisin bread (the perks of working for free) with Capriole Wabash Cannonball Goat Cheese (ChicagoRon can attest to the awesomeness of Capriole Farms), 12 month Manchego, and some brie. Topping that off with some grapes and a great bottle of Carignane.
Life is good.
