I recommend them. I use mine for anything from foie: to sauces, scallops, etc. It's just the two of us, so when I get a deal on something like these large racks of meat, I can break them down into meal size portions for us. Weird, I'm shopping for one of these right now. Which model do you have? I'm looking at this V2440 from BPS for about $100 shipped. The newer/more expensive models all seem to be junk according to reviews on Amazon.
