If I get a Edward Green in suede vs a $100 suede shoe, obviously the EG is much better constructed, but is the suede itself much different - if so how?

Top grade suede in shoe production, like the one supplied by tannery of Charles F Stead (who has the reputation of making some of the finest suede in the world)

http://www.cfstead.com/

is usually 'reversed calf', a full-grain calf skin, which gets sanded and finished on the flesh side (normally the underside).

Cheap suede is made from bottom splits. (A hide that is too thick, needs to be split to the appropriate thickness. You end up with the good layer on top - featuring the grain (pores) - and an absolute inferior leather from the bottom). This bottom split can also be sanded to suede. The texture is coarser and, due to the loss of the grain section, it has little strength and is easily pulled out of shape.

same as the qualities in a good calfskin -- depth and richness in color and appearance, actual thickness, strength
