Victoria BC restaurant recommendations?

The wife and I are staying at the Fairmont Empress in Victoria for 10 days.
Mostly we’re just going to eat good food and relax at the hotel this trip, but we do have plans to visit the Royal BC Museum.

Can anyone offer recommendations for restaurants or any ‘must see’ attractions there?

Victoria is a funny sausage. Like a dowager duchess with hipsters and more than a few vagrants.

It’s the only sub med climate in Canada (Vancouver is a completely different climate) which is why so many vagrants. They can sleep rough all year.

Back to food. After four years here, the food scene is frustrating. Inconsistent. Hard to maintain standards.

Only one very fine restaurant. Deep Cove Chalet. Old school escoffier, and expensive. But consistently fine.

Great brunch, here. Try Jam Cafe for the best one. Hipster heaven and always a long line. But worth it.
