Vegetarian Cookbook Recommendation-Emergency

Ok, so my girlfriend is a vegetarian. I don't agree with it, but I support her. For Valentine's Day I want to find her the best vegetarian cookbook and give her coupons for me to prepare meals out of it whenever she wants. The book can include seafood. Doesn't have to be entirely vegetarian, but mostly please.

The Greens Cookbook is awesome (Deborah Madison)

It's more of an haute cuisine version of vegetarian -- not granola

It's great for serious cooks

I've yet to see a good vegetarian only cookbook. A good cookbook in general should have some great vegetarian recipes though.

i'm not a vegetarian, but i look at deborah madison's cookbooks all the time. get her "vegetarian cooking for everyone" and she'll be very happy. and you'll be well-fed in the future.

The original "Moosewood Cookbook" is a classic. Another vote for "Sundays at the Moosewood."

This cookbook will even be of interest to die-hard Bambi's Mother Eaters. There is an entire section just how to prepare basic rice, and a lot of amazing, exotic dishes.

Alice Waters has one that's decent. I'm holding out for Shawn Mclain to make a Green Zebra cookbook. The moosewoods are really probably your best bet.

Update: Didn't really like any of the vegetarian ones as they didn't have great pictures. I don't know why but I really like to see what the end result is supposed to look like. This is probably dumb, but it helps me cook. It also makes me hungry and want to cook it. I bought an Italian cookbook that had a lot of meatless recipes for all courses. Maybe I can convince her to go back to being a carnivore.

And one worth while if you can find it, Not another bunch of old lentils.
