I am looking for some recommendations for V necks with fairly shallow necks. They will be mostly for casual use with button down collar shirts with and without ties. Thanks.

I get mine either from Gap or Urban Outfitters. Both seem to fit me very well and have a shallower neck but not too shallow.

+1 for Uniqlo. In addition to the cashmere v-necks, there are also merino and cashmere blends which are $40 each, and go down to $30 if you manage to hit the store when they are on sale.

One John Smedley is worth two of any other jumper. They also have a range of different V's, you're sure to find something you like.

They all have shallow necks these days, which drives me nuts. Surprised you are having a problem finding this.
