I have a couple of three piece suits, but without many occasions to wear, what are some ways to incorporate part of it with the vest other than simply the jacket and pants as a two piece.

I've seen people wear:

Jacket, Waistcoat, and Odd Pants

A picture I found on google (his shirt is kind of odd):

Waistcoat, Pants, with odd sport coat
(I can't find an example of this)

Which work, if any?

Strongly depends on the type/fabric of the suit. Is it a tweed suit or a business suit? Or something in between?

I think the outfit above is fine (although I hate the guy), but it will not work with a more formal suit.

If you find me an example picture I'll replace him, haha.

agree with both points

If you have a three-piece flannel suit, the waistcoat can be versatile, e.g. paired with a tweed jacket and cord trousers; you could even pair the trousers and waistcoat with a sports jacket.

Tweeds 3 piece suits are really versatile and can be worn in all kinds of ways. A good thing about "breaking" up a tweed is there's less chance of the pieces you wear more wearing out faster than the rest.

How about wearing the vest with a slim fitting shirt and jeans? just a thought.

I find that a little silly and hipster. I'd only wear a vest with a jacket and trousers.

So, are these business suits we are talking about or tweed?

Not really either, but they do have pinstripes and chalk stripes. One is a Polo RL Garrison 3 piece with close-knit chalk stripes

Me too. Even wearing a waistcoat without a tie is a challenge, although I may try it - I have a tweed 3pc in the works from Chan, and will be looking for ways to do this as well once I have it in my closet (will be a few months though).

I think there is a line. If you can afford bespoke vests, you're too old to wear it with jeans. /sweeping_statement

I would go as far as saying: if you are can afford bespoke vests, you're too old to wear jeans.

You mean those silly kids with low cut skinny jeans and half their shirt showing below their polyester waistcoat?
