Cavalry twill: i see much spoken of this cloth for in favour of its hardiness, particularly for trousers. I am a little confused by this. I have had a trouser in CT and given the high relief of the weave, i find it's very easy for it to get pulled on sharp edges/brambles/tall grass/bike derailleur, basically anything that can catch it...then you've immediately got an annoying stray thread that gets pulled out of the weave. Assuming there's no trick to pulling that back in (and there may well be), i can't see how this cloth can be called 'hard-wearing', when you have to be super-careful to avoid it getting pulled. What am i missing?

I'm looking for a fabric for a wedding suit, possibly a three-piece, that I can use as a regular three season suit afterwards. The colour should be medium grey and it should be wrinkle resistant.

The wedding will take place in mid-October. In terms of temperature, anything between 10° and 20° Celsius is possible over the course of the day. However, as it will mostly take place indoors, this is only of secondary importance.

Without having seen it in real life, my current favorite is VBC Ascot 4-ply 18051. Might VBC Ascot 6-ply be an option too? Are there any other bunches I should take a look at when I am meeting with my tailor?

I don't think there's anything wrong with a lack of practicality/(consistent) utility. You want it. Get it. Enjoy it.

Solaro looks awesome. Sure, probably don't wear it in July, but I'm sure you can tolerate it enough to suffer through a warm-ish winter/early spring day...and I'm sure it will be very well received.

And, again, if you enjoy it...that's really all that matters

I have three Smith Solaro suits. Living near the middle of the USA, I find them great for shoulder season, i.e., October-November and April-May.

I have had single breasted suits made up in both the 18051 and 18052 of Drapers 4-ply book. I wear them every week for work in London. 4ply has wonderful drape and is crease resistant - it also has virtually no sheen and a decent amount of texture. I highly recommend them for work suits - just note the 18051 might be lighter in colour than the grey you are looking for. When there is a breeze it is a nice reminder of the openness of the 4ply as it cools you down.
Yes you could go 6 -ply but really you are just opting for more weight and drape - which in summer months you might struggle with (if looking for an all season suit).
As for a wedding, perfectly fine too, refined without taking attention away from the bridal party.
