Not really much to do in Newport during the winter, definitely a summer town. Have you popped into the mansions yet to see if they are still decorated from the holidays? You can do a tour of them, or just a couple for about $30 a person. They are actually really interesting to look inside of and get a sense of how the industrial titans lived during the summers.
Other than that there's not much there accept some small shops with misc. clothing, art, and Newport souvenirs.

Not sure where you're from but if you're not from around here I do recommend checking out Boston. It takes about 1.5 hours from Newport and it's your best bet for some good food and activities for the day.

Another good option and one I personally recommend is Providence RI. An interesting city with a lot of good restaurants and quite a bit to see. You can check out the University areas (Brown, RISD, Providence College) go get some good food, see the historic buildings (Theaters, hotels, old Church's) ,etc. Enough to make a day of it and without the hassle of going into Boston.
If you do go I recommend parking at the providence place mall. Central location and the parkings pretty cheap.

What hotel are you staying at in Newport? The Viking used to have a good breakfast, and the smaller B&B's should be able to direct you to other local spots.

Well......the drinking experience is not that great there:

1. Bars get busy at 11:30, then close at 1:00 am
2. Most bars only accept cash
3. The New England accent is incredibly unattractive on women. "Ohmiyagwuhad, yua shayuldahs ah so brwohad"
4. No drink specials? Seriously?

But did do a polar bear plunge in Newport Harbor, drank with a bunch of Navy guys, played soccer in the snow, did the chicken dance with the bride's Portuguese family (portagees love the chicken dance, as they repeatedly told me), and learned the little Portuguese two-step that they do.
