    Better than me. I have 0 years of studying, 14 years of lazy practical learning and around 10 people around me that do the other 99%.

    Nice knives, btw. But I am drawn to the ones that Matt mentioned a couple years ago, Kikuichi. http://kikuichi.net/ One of these days I plan to visit the main store in Nara and pick something up.

    Because it is the wrong size for what a paring knife does. Japanese pare with a different knife than a petty of that size. For them it is a utility knife. It is useless for what you do with a paring knife, other than dicing shallots, if you have good, traditional knife skills.

    I really like the Cooking Channel (not sure if I've said before). Chuck's Day Off is really good. Anyone know anything about his restaurant in Montreal Garde Manger? Also Jamie Oliver uses a fuckton of Parm. Still like his stuff though.
