These are both great. Two-tone with dark dial is a must (unfortunately the chocolate dial is only available for the 41 model. I’d get the same config with the slate dial in 36mm)

I’m currently debating the above Day/Date, a rose gold speedmaster professional or Santos in gold or rose gold. Gold just looks better with my skin tone, but I’d be worried it is too flashy. It’s also $30k instead of 5-10k. I could get the stainless of each for the price of a single gold version. Part of me wants to be practical, another part wants to splurge a little on a celebratory watch for my new position.

Gold DD is an all-time classic. Don't think the others are worth the money.

A Lange upped their prices pretty substantially - the 1815 is up ~14% and the Saxonia Thin is up ~10%

With the 1815 at $31,100 its basically in the same price range as the Patek 6119

All three have such different vibes. I think a gold Day-Date is peak "celebratory watch".
