I did a quick cure on the salmon and I think I will do this for all fish going forward. Generously salted and sugared, let sit at room temp for 20 minutes, rinse in ice water. Pulls liquids out, seasons fish, and makes the flesh very nice textural wise.

just a rub with the salt and sugar? sounds like a neat trick

I think Tensley is making some of the best syrah (for the price) to be found anywhere.

Third week on vacation and counting. Suppose those four weeks off equals six weeks on rehab instead of going back for work.

Totally worth it. 100% Tuscany Syrah tonight.
