Cinsault is underrated as a single varietal. Margerum makes a good one too and you inspired me to go get a bottle from the cellar and crack it!

Counoise as well. Paix Sur Terre in Paso makes a ridiculous one. Great summer wine, perfectly quaffable, red fruit, high acid
