Am I alone I’m not being a fan of champagne? (Is it something you guys have always liked, or grown into?)
I for sure hope so ?.

? seriously, kind of evolution. Start out to prefer big, maybe sun ripened fruity wines. After that CdP, priorat and stuff. Barolo. Northern Rhône syrah and pinot noir. Champers have grown on me over the years. But I can't say I've never liked it.

Have you spend some money and tried Taittinger Comtes or similar? Maybe could help give you a better experience, but obviously some things are just not for you

I tend to eat greasy (meat and potatoes) and my favorite wine to drink with that type of food is champagne. In the summer heat I also prefer champagne to something like a rose.
Do some autentic patata bravas and semi-dried chorizo then. That's hardcore greasy and great!
