My warehouse and delivery guy Matt had to shut down for a bit because a couple of his workers had COVID. This is leading to some repetition from diminished household stocks at hand, for which I apologize.

'99 Doisy-Vedrines with figs, a nice local bleu, honey, and prosciutto.The way to do it is to put a little cheese on a half of a fig, drizzle on a bitt of honey, and eat that. Then take a sip of sauternes. All these things have funky and savory qualities and go well together. The Sauternes, I have to say, was a little thin mid-palate. Was a little disappointed in it.

A nice Sauternes is truly a thing of beauty. Sorry yours fell a bit short mid-palate. I’m no expert, but have had maybe 50 different ones in my day. Can’t say I’ve had too many that let me down... Just looking at that bottle has me drooling.

How was the 2005? Maybe one years since I drank that one. Think I will try the -07 one of these days

Have not been around in awhile and I am just seeing this. I thought it was drinking quite well. Very enjoyable for my 50th. Fine bubbles...light citrus with maybe a touch of peach.
