I see more variability in prices of Barbaresco and Barolo compared to Brunello. Brunello is a $50-$75 dollar wine in my market where the Piedmontese wines range more like $35-$85 depending on the producer.

I think that is true except for Barolo, which is at the high end of your range for Piedmonte.

Agreed. There aren't many Barolo's under $50. You can get great Barbaresco in that $40ish range though which I actually prefer to Barolo.

Of the white variety? I think red may be a little heavy for that dish

I'd go white.. Pinot blanc, or Gewurztraminer. Maybe even chardonnay, depending on what you're putting in them.

I second the chardonnay or even a nice sauvignon blanc, something not to dry but not sweet

I was thinking a light, fruity Pinot to play off my homemade bacon layer. A Spatburgunder maybe.

Like a Paso wine. Being as it’s from the La Mancha are of Spain that makes perfect sense.
