    My problem is that my wine fridge does not have separate temp controls. So you think I'm OK w/ 50/61? Avg is about 55? Or am I going all Jose Pidal?

    61 might be a bit warm if it's something you're trying to age for a while like Vintage Port, Bordeaux, Big Cali Reds, etc. If you plan to drink it all in the next 3-5 years you're probably golden.

    Making stuffed pork loin and oven roasted asparagus. Popped my last bottle of 2006 Chateau Montelena Zin to go with. For those of you who don't like the fruit bomb Zins, this is your huckleberry. More restrained, moderate to light tannins. Nicely balanced fruit and alcohol. If I were blind tasting, I'd guess this was a Merlot.

    So, had this tonight: [​IMG] Sight: Clear and bright with rich, intense golden colour with marked rim variation. Against a white background the rim was as clear as water. Nose: apple/pear, no off odors, stoniness. At first, no hint of oak. Over dinner, very slight hint of oak. Taste: if I had to pick just one adjective for this wine, it would be "steely." Strong acid, strong minerality, medium alcohol. No taste of oak upon opening but slight, warm taste of vanilla over dinner. Apples and pears on first taste, but last glass gave just a hint of cream and peach pit. Overall: my first mature white Burgundy. I could not believe the strong acid and minerality still present in this 15 year old white wine. Everything was so integrated yet it had powerful component attributes.

    nice, sounds like something I'd go for. But I do love that classic white burg "nuttyness" that they seem to do better than any other region.

    So what champagne is everyone popping for NYE tonight? Personally, I will unfortunately be toasting all by my lonesome tonight b/c conjunctivitis has prevented me from coming into contact with... well, anyone. Haven't decided whether I'll go with Pierre Gimonnet, Chartogne Taillet St Anne, or Gaston Chiquet Tradition. I had planned on picking up a half of Salon for tonight but now I can't go anywhere [​IMG] A little article on what some local Chicago sommeliers will be enjoying tonight. http://www.thefeast.com/chicago/rest...609394.html?ct One of those mentioned is my boss, and he made a very good selection [​IMG] Glad you liked the burg and the food pairing, Piob.

    i had zero time to plan this so i just got a bottle of vueve clicquot yellow. it was an "oh shit, i need something to get before i leave" purchase.

    is that the only thing that prevented you from picking up a half of Salon?
    I don't know, I hadn't looked into it very heavily. Somebody told me that Salon didn't make half bottles, but that their sister company Delamotte did. Someone else told me that Salon did make half bottles and that they were available at a store 3 blocks from me. Kind of confusing. I was just planning on going down there to check it out.

    I don't think they make half bottles (hence the joke), but perhaps I'm wrong. Krug does, and I approve.

    Well I'll go ahead and assume that they don't, since the person who told me they don't is a professional sommelier and the person who told me they did is just a random d00d.
