What flour did you use in that recipe? My grandson has loads of allergies, and I've always had trouble getting a safe pizza base to prove to the point where I can roll it out.

I used the "Tipo 00" finely milled stuff. It apparently makes a 'neapolitan' style crust which sounds like a good fit for this thread. PM me if you want the recipe!

What kinds of allergies? You can get a pretty good gluten free pizza crust online, we used on at a country club i worked At and i preferred it over the regular

If that's your back log I wonder what your front log looks like.

Almost everything. Wheat proteins, milk proteins, soy, most nuts, eggs ...

Wheat has a few different proteins and its not the gluten that sets him off, but another one. So no form of wheat flour can be used. We've tried chickpea, rice, quinoa and a few other things, but they don't seem to bind with the yeast to make a dough. My attempts have been pure disasters.

Your avatar and bomber talk reminded me that i still had to watch Catch-22.
Series not movie (saw that and read the book like in highschool )
Highly recommended, better ending then the book but not as good as the movie .
In my opinion anyway ,watch it if you haven't already .
Apropos the mini series Catch 22. When I first saw the series I wanted those shorts they wear so badly. A few month later a vintage shop in my hometown got these, deadstock from WWII. Problem is, they are size 42" :( If anyone knows what shorts I am talking about and want a pair I can direct you to the website.
