I also have Google Fiber and they offered me the same 2GB deal. Doesn't seem worth the extra cash. 1GB is more than enough.
Most people would be better off spending the extra money upgrading the home's Wi-Fi network. That's usually the bottleneck when you have those types of speeds being pumped into the home.
To get anything close to those posted speeds you really need 802.11ac primarily for the MIMO benefits, but that's max speed is 433Mbps (on the 2.4GHz spectrum), but you really need to go to 802.11ax to start seeing wireless benefits of 1Gb or above.
Wired is a different ball of wax.
