This is going to sound nuts. But I made some seriously great ribs over the weekend in 60 minutes. Well, actually I did it in 55 as I pulled them 5 minutes early. They were so good that I not only did them on Saturday, but again on Sunday. Although, cooking with the grill open in a rain storm extended the cooking time quite a bit, but that's another story. When it's 140 degrees outside like it was on Sat, they cook great in just one hour. And I realize this is a charcoal thread I and I did this on gas, this has sorta become the default Rib discussion thread. Doesn't sound nuts, I used to grill ribs "steak style". I would essentially sear them about 5 m inutes a side on a super hot grill, then put them to the side (still over direct heat, just less charcoal) and cover the frill for 35-40 minutes. Then just take them out and eat.
