Tapering selvedge denim

I've had a pair of J.Crew's 484 selvedge denim for some time now and it's good to wear with some boots and stuff but I'm too used to the smaller opening on my Levi's 511 commuters. I was wondering if it's possible to get it tapered to a 7" opening and save the selvedge. Also, if anyone can recommend a place for me to take it to in Manhattan.
