Talbott estate vs bizzocchi

Today for the first time I closely examined an Estate tie. Previously I'd only bothered to look at the Seven Fold line. I saw that the Estate ties are saddle-stitched, as are the Bizzocchi ties. However, the ways in which they are saddle-stitched are quite different. Talbott seems to use a stiffer thread(and fewer strands of it), while Bizzocchi uses more strands of a softer thread. Also, Bizzocchi makes 3/8" or 1/2" stitches at intervals of this same length while Talbott makes 5/8" or 3/4" stitches at 1/4" intervals.

Well, I wondered why Talbott saddle-stitches its Estate ties but not its Seven Fold ties.

I personally have never seen a saddle stitched 7-fold, and I'm sure someone much more knowledgeable in these matters than I can explain.

Our newer Como ties and our Campagna series are saddle stitched. The short answer to why it is not usually done is because it adds a lot of cost. Frankly, the biggest advantage is that it requires attention to detail that I have found makes a better product. Example below:
