Sushi and Sashimi

I love this stuff. Thomas inspired me to get sushi tonight. So freakin great.

Spicy tuna rolls. Eel. Cucumber rolls. Crab California rolls, I love them all.

What's your favorite?

Yes. Dunking your sushi in tons of shoyu and putting a mountain of wasabi on there is pretty much an insult to the chef. And what's the point of sashimi if not to taste the damn fish in the first place?

My local guy gets the most amazing scallops. They are sweet! Not at all fishy and full of flavor. After having scallop sushi or sashimi I sometimes ask him to make up a spicy scallop hand roll. It might be a bit like pouring steak sauce on a juicy fillet but I love it.

I was taken to this tiny little place in Tokyo (Ginza) last week and the chef recommended some "budo ebi", a medium sized shrimp that had a purple shell (budo means "grape" in Japanese). It was unbelievably good....sweet and soft. I had three!

I've been eating/loving sushi/sashimi for over 25 years. If your chef has it, try the albacore sashimi. I also loved fresh uni when the bars I went to had it. But, it is hard to keep fresh and the chef ends up wasting the urchins because the meat just isn't edible. Became too expensive and fresh uni is no longer served at any bars I go to. So, the refrigerated uni is what I eat. Still good but not as good. I always end my orders with uni. Most of the time my next to last order is hamachi. A mild, almost buttery fish. It's also great cooked. And relatively inexpensive here because there are a lot of yellowtail in the ocean near here.

I also love some of the more creative rolls many of the local chefs have come up with. Some are very filling.

Also, for the vegetarians, try the shiitake. Usually, the chefs prepare it in hand rolls or regular rolls. It's excellent.

A couple weeks ago I had a big bowl of sashimi don - 3 huge slices of Salmon, 3 huge slices of Toro, and a fistful of Uni. It was the best food I've ever eaten and it only cost 1,800 JPY.
