People boil meat because a real good smoker is not practical or easy to do, especially in the city.

Interesting... living in Virginia I've had more than my share of outstanding bbq/ribs. I thought that Blue Smoke was pretty good, certainly better than I expected for that kind of cuisine in NYC. I assume you've been?

I had a smoker when I lived in the new york area. now, I have to say I am very happy with chicago Q.
