Grass fed rib. Roasted at 550 about 25 min. Pulled it at 120 internal temp, rested about 30 min which finished it right at 135. Not pictured: Yorkshire pudding, green peas, and of course gravy from the pan drippings.

We're doing SRF ribeye tonight too. I made focaccia last night for dinner and I'll take the left over, slice into strips, more EVOO, and toss on the grill when I finish the steak. Add in some TJ's Grain Medley with sauteed veggies stirred in and a good bottle of wine. :)

Tonight, I am the plebbiest. Smoked a tri-tip to 130 then seared and rested while toasting some sourdough rolls and making a quick sauce of vinegar, ketchup, onion powder, garlic powder and a dash of soy sauce. Served with leftover chop salad.
