In these trying times, I have been unable to find sufficiently thick ribeyes to satisfy my Hillstone Hawiian Ribeye craving so I am trying some NY strips. Will post results if I can remember to.

I prefer strips to ribeyes...

*exceptions: prime rib and any steak made from just the spinalis...

Yeah, labeled black angus USDA prime. Will probably get the strip also as the missus hates fat. She eats about 30-40% of a ribeye steak. Also new to get some pork butts but the ones on creekstone are a bit too big

A solid pork chop is really hard to beat. Cast iron seared and finished in the oven. Mixed greens and homemade mustard vinaigrette.

That fat cap tho.
