I was in Florence the other day and visited the legendary Trattoria Sostanza.

This is by far the best bistecca experience in the city, everything is superb - the taste, the atmosphere, all the other dishes, I'd eat there every day if I could.

Some shots below. Proper rare meat, the way it should be. They are true cooks!

So I’ve clicked on “reply” on two posts here and I get rerouted to the Huggies diapers homepage :eh:

Anyway, I’m sure I’m in the minority but that pic of the cut steak before the dessert, that’s too rare for me, doesn’t look like it even went up 1 degree in temp from its raw state. But I recognize that this is a lean piece of meat, seems much leaner that American prime so I understand the desire to not overcook it but wow, that looks like a gynecological exam :uhoh:

Look I get it, as far as regular steak goes, this would be too rare for most people. But that's bistecca alla Fiorentina and this is simply the correct way to eat it. It's very lean so at this internal temp it's very tender. You pour a little olive oil into your plate, dip it in, sprinkle a bit of salt and eat. And it's delicious and that's all we care about. "Brutto ma buono".

As another example, look at the dish below. That's fully raw meat. But I doubt anyone here would say this is inedible.

Inedible? For sure. Cannot tolerate meat that looks like it wasn't even cooked for more than 2 minutes.
