Most kids that age are happy with mac n cheese and hotdogs.

You do run the risk of him turning 10 and demanding Japanese A5 Wagyu.
Thankfully he’s a good eater, not picky and will absolutely crush a hot dog, Mac and cheese and some nuggets. But tonight he was insistent he wanted the steak I’d gotten for primary night (tomorrow) kids got good taste - NY Strip Marbling Score 9.

I was talking about meats with a friend (as bros are wont to do :bigstar:) and he asked a profound question, “If you can only have one cut of beef for the rest of your life, what would it be?”. I didn’t think much about it, as much as I like the premier cuts (ribeye/strip/filet) if I can only have one, it would be a skirt steak (or a sirloin flap). Deep and luscious beef taste, a multitude of cooking/eating options like a steak sandwich, fajitas, steak frites etc.

Solid choice - someone mentioned it a couple pages back but I think I'd have to go with picanha/coulotte. Same logic on the versatility. One of my favorite butcher shops in the world and has a lunch counter where they do a smoked coulotte they slice up for a sandwich and it's otherworldly. If anyone's ever in Naples, FL - Check out Jimmy P's to get one.

My only beef (aha!) with skirt is it has become ridiculously expensive. I was at Publix today and outside skirt was $29/lb while ribeyes were $15/lb. I'll just cook the ribeyes and slice them up thin, thanks.

Skirts steak prices are insane. Shockingly by me, the cheapest is Whole Foods, which has it regularly at around $14-15 a pound, for really nicely marbled steaks. My local boutique supermarket also has small skirt steaks ( and hanger) at $29 a pound ( they have tomahawk ribeyes at $17 a pound) But what I find shocking is that the “poors” supermarkets by me have it at around $18-20 a pound, this used to be a cheap cut of meat.

Gf and i had a little celebration dinner last night. Salad was incredible. Love some bitter greens.

excellent sourdough loaf. Went with the 45 day dry aged strip which had just enough funk and the spinalis which frankly kind of underwhelmed. May have just been an in comparison thing.

Fries were good. Love a crunchy exterior and creamy interior fry. These were a bit too thick cut for me (i think every one has a specific style of fry they like and deviations just don't cut it that doesn't mean that style is bad just that fries scratch specific itches for people). And they were very salty and I have a salty palate. But if you're going to serve potatoes and especially fried ones and even more especially if they are thick go hard on the seasoning.
