Or brisket in Texas. We don’t usually do whole pigs in Texas.

This is a true statement. Brisket and beef short ribs are at least 3.5 times better than "Memphis style" pig ****. I still love pork BBQ, but it's objectively worse than BEEF.

Moist cut brisket>>>pulled pork. Not even a contest.

Beef ribs> pork ribs. Closer contest but beef ribs are still better.

BBQ chicken is garbage.

I’ve never liked barbecue beef ribs. They have always been too rich and ***** for me.

When I was a child I always had a sensitive stomach, not being able to tolerate ***** stuff and was often sickly (though I always enjoyed really spicy foods). There could be a holdover reaction from way back when I had a stomach virus and was sick after eating barbeque beef ribs. On the other hand, I always buy ***** pork chops (pork fat, in my opinion, is the best). It’s so nice that we are raising fattier pig breeds.
