    Don't know if this has been asked before, but do you guys smoke salt? Every time my father in law sets up his smoker (I dont have one yet - I'm a pleb) he puts kosher salt on a paper plate and smokes it for us. Goes great on salads, potatoes, veggies, eggs, just about anything. Highly recommend.

    Been really into using short rib as my new 'cheap' steak. Tons of marbling, flavor, and usually 50% of the price (or less) of a ribeye

    Nice fucking meat! Perfectly cook as well! My sausage is much bigger, but size isn't important.

    I butterflied a turkey last night and it's going on the smoker in 3 hours. Dry run for next week. Also going to smoke some pork tenderloin. Pictures forthcoming.

    Sausages are buried so they don't dry out. Just put into the oven.

    I was having a problem buying just duck legs in bulk so I went and bought three whole ducks from a local Asian market. That meant I had to break them down myself. I got the "oyster" on all six legs and was rather proud of myself. Did a nice job on the breasts too and I'll lay them down to cure into a couple different types of duck charcuterie tomorrow.
