I'd say my preferred is an 8.5" however, I do have some 8.25" and 8.0 that work well too. If it helps, I knew your measurements going in and that they were most likely trimmer than my usual but was hopeful that they would work out.What size hem opening do you usually wear?

i suppose it depends on the fit/size, but according to the website, a 33 contemporary would be 8 inch hemI'll throw in a +1 for the 8" hem opening. Can't wear OTC socks with S&M trousers as-is.
The hem on a 33" waist and up is already at 8", so how much wider do you guys need these?
At a 36" waist, I wouldn't want the hem any wider than it already is.
