Shopping around for an overshirt // fall jacket. Bought two 100% wool pieces, the difference in feel is drastic - what *exactly* is the difference

I would like to understand what makes one wool different from the other, and how to vet (if possible) brands before buying (i buy most things online).

Brands:
- Portuguese Flannel - $250 - unknown wool source.
- Document - $400 - "British wool twill from Abraham Moon"

First one is itchy af. Second is smooooth.

PS: I'm returning both, PF is too tight, Document is so oversized, a size down looks super baggy on me lol.

Edit Afterthought: Would it make sense to start at material source level and then make a list of "vetted" brands?
