Not sure about specialists but I've a couple of suggestions Walker Slater is a clothes shop rather than a shoe shop but was stocking Crockett and Jones last time I was there. Great shop in it's own right and I heartily recommend the restaurant next door, The Grainstore, if you're passing. It's just off the Royal Mile: Victoria Street, which runs from George IV Bridge (near the junction with the Royal Mile) and Grassmarket: http://www.walkerslater.com/ Harvey Nichols, in St Andrews Square had a selection when I was there last. Jenners on Princes St might have something but the famous old place is not what it was. Sorry not to be comprehensive: not lived there since I was a kid and only get back when visiting my Mum these days
