All right, summer is almost here. Anyone care to share their favorite summer recipes either for food, non alcohol or alcohol drinks, or snacks as well?

This is one of my all time favorites. Salmon can be substituted for the tuna.

Good tomatoes sliced. Purple onion sliced. chunked fresh mozerella. Dried oregano and basil. driziled with olive oil served with crusty bread. It is also good without the cheese. Good tomatoes are the most important part.

my paltry herb garden is going to be so key this summer. I have:

2 tomato plants
2 basil plants
1 mint
3 rosemary (all in 1 pot)

The tomatoes are starting to come in and redden.

Basil is good for any tomato or tomato sauce dish.

fresh picked tomatos, fresh picked basil + store bought mozzorella is the greatest snack known to man, at least for this summer

mint is perfect for mojitos on a hot summer evening. can also make tea with it.

I use rosemary for grilling all the time, salmon, tuna, chicken, etc.

Cranberry Mousse
1 cup Ocean Spray Cranberry Juice Cocktail
1 package (3 oz.) raspberry flavored gelatin
1 tablespoon raspberry liqueur
1 can (16 oz.) Ocean Spray Whole Berry Cranberry Sauce
1 cup heavy cream, whipped

In a saucepan, heat Cranberry Juice Cocktail to boiling; stir in raspberry gelatin until dissovlved. Stir in Cranberry Sauce and liqueur. Chill until mixture is thickened. Fold in whipped cream. Pour into serving dishes. Chill until firm. Garnish with additional whipped cream. Six to eight servings.
I usually pour this into a mold, then garnish with mint leaves and whipped cream.

1/4 cup EV olive oil 3 cloves garlic pressed 3 large very ripe tomatoes diced (preferably just picked) 2 stalks fresh basil rough chopped (also just picked) 1 tsp kosher salt saute garlic briefly in olive oil add tomatoes, basil and salt stir to combine this should be done in the final 2 or 3 minutes of cooking one pound of your favorite paste as you only want to heat the tomatoes and basil and dissolve the salt Combine pasta and sauce and serve with copious amounts freshly grated reggiano parmigiano

I grow the fresh items in the garden each summer and August and September dinners are 50% of the time; this dish as the main course or at least as a side dish.

pico de gallo

2 large ripe tomatoes, diced
1 large onion, diced
1 medium green pepper, diced
1 jalapeno, seeded and diced
1 clove garlic, diced
1/2 cup chopped cilantro
juice of one large, ripe lime
salt and pepper to taste


simple summer salad


1 large cucumber, sliced
1 large onion, sliced
cover in apple cider vinegar
salt and pepper to taste
refrigerate before serving
(best if prepared day in advacne)

My Jerk Chicken

Sorry....I don't measure exactly, I do it to feel and taste..... but it will be pretty obvious if you try it. Just realize it will taste MUCH hotter before it cooks. The peppers lose some heat when they caramelize, and the water in the onion will make it pretty soupy.

In a food processer, mix:

1 red onion
a few scallions
a generous squirt of honey
a few tsp of brown sugar
two cloves of garlic
a scoop of allspice
a scoop of nutmeg
1-2 habanero or jalapeno peppers , seeds removed
a few sprigs of fresh parsley (you may prefer cilantro, but I hate it)
salt and pepper

Marinate bone-in chicken for 1-2 hours in fridge, then cook. I find it works best to do in a pan, but I have done it on a grill. What's nice about the pan is that you can begin stove-top which will get all of the sugars to caramelize, then you can deglaze the pan with a little beer or wine, scoop the thick brown sauce onto the chicken, then put the pan into the oven to finish.


I also like to do Scallops in mango salsa....pan sear the scallops with salt and pepper in a mix of Butter and grapeseed oil.

Put them over a medium /fine chop of
Mango, halapeno, scallion, parsley, red onion, garlic, and a hint of lime juice

Pedro's Salad
Red leaf lettuce (1 head, torn & washed)
Good Tomatoes (2, sliced)
Sprouts (a good handful - I like alfalfa or broccoli)

Crimini mushrooms (8-10, scrubbed andchopped)
Yellow Pepper (1, sliced in thin strips)
Red Onion (1/2, sliced)

Ripe Avocado (1, sliced)
Kidney Beans (1 can, S&W is good)
Blue Cheese (small/medium piece, crumbled)

Newman's Own original dressing

Dress (not overdress) & mix; serve w/ good bread and a nice rose (the wine)

To revive this languising thread:

Shrimp & Swordfish Kabobs w/ Cilantro Vinegrette Drizzle

Skewer up some shrimp, cubed swordfish (1.5 - 2 "), yellow pepper pieces (again, roughly 2"), and cherry tomatoes. Alternate shrimp, pepper, SF cube, tomato, etc. 2 skewers per person is good - grill these bad boys, but don't overdo it.

In a blender: bunch of cilantro; slowly blend in 1/4 cup or so of vegetable oil. Throw in a garlic clove, some salt and lime juice. You don't want it too thick or pasty - should be able to pour easily. Adjust salt and lime for taste.

Plate up a mound of cous-cous, two nicelygrilled skewers, and drizzle same w/ vinegrette. Seerve w/ a nice green salad, and again, a chilled rose...

GYI: This can be called many things, but not salade niçoise.

Basic Salsa Fresca 4 tomatoes, diced with pulp and seed removed 1 Red onion, finely chopped 1-2 cloves minced fresh garlic 1 jalapeno or habenero pepper, seeded and minced 2 small limes worth of juice A dash of olive oil Ground black pepper and sea salt Chopped fresh cilantro leaves to taste
